A Little Baby and Giant Squash

It’s officially fall- my favorite season of the year! Along with pumpkins, apple cider, and so many delicious seasonal treats, this fall is particularly special as we welcomed baby Nolan into our family and into our hearts two short weeks ago. As an Integrative RDN, I’ve been on a short hiatus but will return to normal blogging activities and nutrition counseling soon. In the meantime, meet baby Nolan. . .

Also, this beautiful (20#!) Georgia Honey Roaster Squash was grown by family friends and was gifted to us to celebrate the new baby. I’m in need of some inspiration. What would YOU do with a 20# squash that is similar in flavor to butternut or acorn squash? I’d love to hear your thoughts, ideas, and recipes- please leave a comment below!

Sincerely, Erin
