Crunchy Spiced Chickpeas

These tasty snacks are loaded with fiber, protein, vitamins and minerals, and crunch. They are a great alternative to chips and other salty crunchy less healthy snacks and are easy to make yourself at home. As a Fort Collins Nutritionist, I love to make my own healthy snacks and mix up the flavors. The crunchy chickpeas in this quick and easy recipe are spiced with Garam Masala which is a blend of black pepper, cardamom, cinnamon, cloves, cumin, and coriander. You could also use curry powder, chili powder, cumin, or your favorite spice to make these crunchy chickpeas your own creation.

 

Crunchy Spiced ChickpeasStraining Chickpeas

Prep time: 5 minutes

Cooking time: 50 minutes

Yield: 6 servings

Ingredients:

3 cups cooked chickpeasBaking Chickpeas

2 tablespoons olive oil

1/4 teaspoon sea salt

1/2 teaspoon garam masala

Directions:

1. Preheat oven to 400 degrees F.Crunchy Spiced Chickpeas

2. On a large baking sheet, add cooked chickpeas, rinsed and drained.

3. Drizzle with grapeseed oil, and toss to coat. Spread chickpeas evenly on sheet. Bake stirring occasionally with a spatula, until very crisp, about 45 minutes.

4. Remove from oven and sprinkle with sea salt and garam masala or spice of your choice. Serve warm or at room temperature.

5. Store in a sealed container for up to 2 weeks.

Note: The recipe calls for soaked and cooked chickpeas but if you want to make these in a hurry, just grab a couple cans of pre-cooked chickpeas, drain them, rinse them well, and follow the rest of the recipe.
