Tomato Cucumber Salad

This recipe is a super quick and simple way to eat up lots of cucumbers and tomatoes from your CSA (Community Supported Agriculture) share or from the farmer’s market. As a Fort Collins Nutritionist, fresh vegetables are my number one recommendation and this is a tasty way to eat more fresh vegetables raw. Enjoy the fresh taste of summer!

 

Tomato Cucumber Salad

Yield: 4 servings

Prep time: 10 minutes

Ingredients: width=

2 tomatoes, chopped

1 cucumber, peeled and diced

1 onion, chopped

1 tablespoon lemon juice

1 tablespoon extra-virgin olive oil

Sea salt, to taste

Ground black pepper, to taste

Directions:

  1. Combine tomatoes, cucumbers, and onions in a medium bowl.
  2. Season to taste with salt and black pepper. Toss with oil and lemon juice.
  3. Chill until ready to serve.
