Grilled Veggies

I get that this blog is all about holistic nutrition, but I wanted to prove to you that good old grilled veggies fit the bill. Its not about being complicated. Its about making healthy real food, simple and easy to prepare and eat. And these little gems are healthy and delicious! Happy grilling. =)

Prep Time: 5 minutes  \"\"

Cooking Time:  5 – 10 mins    

Yield: 4 to 6 servings


2 Bell peppers (red, orange, or green)

2 Green and/or yellow squash

1 Onion

Other veggies (snap peas, mushrooms, potatoes, etc.)

2 tbsp oil

2 tbsp favorite herbs (parsley, oregano, etc.)


1.  Chop the veggies into 1/2\” chunks

2.  Mix with oil, herbs, salt and pepper

3.  Put into a grill basket or foil lined baking pan

4.  Cook on the grill until veggies are crisp-tender

5.  Enjoy!
