Mediterranean Chickpea Salad

Yield: 4 servings

Prep time: 10 minutes


1 can (16 oz.) chickpeas

½ cucumber, diced

10 cherry tomatoes, cut in half\"\"

2 cloves garlic, pressed

1 tbsp extra virgin olive oil

1 tbsp lemon juice

1 tbsp parsley, chopped

Sea salt and pepper, to taste


  1. Combine all ingredients in a medium bowl and mix well.
