Refreshing Summer Salads

This evening, I gave a workshop at the Fort Collins Club called Healthy Eating on the Go. At the beginning of the workshop, I asked the participants \”what is your #1 challenge to eating healthy on the go?\” There were two main themes to the answers: lack of preparation and not knowing what foods to pack. Can you relate?

The participants got pretty excited when I talked about making salads (not just lettuce!) and having them for lunch, dinner, or sides for a couple days during busy weeks or taking them to potlucks and picnics.

Salads are awesome in the summer. They keep for 2-4 days in the fridge, are loaded with fresh vegetables and leafy greens, packed with vitamins and minerals, and are full of real food nutrition.

As a Fort Collins Nutritionist and frequent recipe creator/blogger, I know that its easy for delicious recipes to get lost in the archives. So, to make it easy-er for you to make some refreshing summer salads, I dug through my blog and created a list of favorites.

If you\’re on the gluten free diet, all of the recipes are both gluten and dairy free. If you\’re not on the gluten free diet, these are just really healthy and really yummy recipes. Pick one and give it a try!
