Creamy Avocado Kale Salad

Great salads don’t need lettuce! This leafy green salad made with kale is loaded with vitamins A, C, and K, minerals like calcium and iron, and has more antioxidants than any other vegetable. The lemon juice, salt (from the tamari), and healthy fats in the avocado soften the kale greens to make this quick and easy recipe delicious too. Creamy Avocado Kale Salad

Yield: 4 servings

Prep time: 10 minutes

Ingredients:Creamy Avocado Kale Salad

1 bunch kale, stemmed and chopped finely

3 medium carrots, grated

1/2 red onion, diced

1 avocado, pitted

2 tablespoons lemon juice

1 tablespoon tamari (GF) or soy sauce

1 teaspoon toasted sesame oil

2 tablespoons sesame seeds

Directions:

1. Toss kale, carrots, and red onion in a large bowl.

2. In a small bowl (or blender), combine the avocado, lemon juice, tamari, and sesame oil. Mash or blend avocado with other ingredients until smooth.

3. Add avocado mixture to the large bowl and massage salad to combine with clean hands.

4. Set aside at room temperature for about 30 minutes to soften kale before serving or refrigerate until ready to serve. Enjoy!

Note: If you have trouble digesting raw salads, blanch the kale before adding it to the salad. To do this, boil about 1 inch of water in a pot and add chopped kale. Boil for 1 to 2 minutes or until kale turns bright green. Remove from heat and drain water.
