Balsamic Roasted Beets

If you like beets or find yourself with a bunch of them in the fridge (like from a CSA or Community Supported Agriculture share), this is a quick and easy recipe that makes beets taste delicious! As a Fort Collins Nutritionist, I often get asked how to cook certain fresh vegetables and I get asked about beets pretty frequently. Give this whole food recipe a try as a side dish with dinner this week!

 

Balsamic Roasted Beets

Yield: 4 servings

Prep time: 5 minutes width=

Total time: ~ 45 minutes

Ingredients:
1 bunch beets (~4 medium), peeled
3 tbsp balsamic vinegar
3 tbsp grapeseed oil or olive oil
1/2 tsp sea salt

Directions:
1. Preheat oven to 400 deg. F
2. Cut beets into 1/4 inch cubes and toss with the vinegar, oil, and sea salt
3. Pour beets into a 13 x 9″ pan and roast for about 40 minutes or until beets are tender
4. Enjoy!

Note: Beets are seriously one of my least favorite vegetables. . . and EVEN I think these are delicious!
